Summer is basically here, and its already a hot one. So what's better to cool down than with Ice Cream Sandwich.
Back when we had a storefront we started making brownie cups topped with ice cream, making it my personal summer treat. As we moved to 100% e-commerce and the days have started becoming longer and hotter, I really miss these ice cream topped brownies.
Since everyone deserves to try this delicious combination, here is the brownie ice cream sandwiches that I've made. You can easily make them at home and keep them in your freezer for later... I don't know why you would do this instead of eating them all at once, but you do you.
Since our brownies are kind of big, grab the brownie of your choice and cut it in half. Get a scoop of your favorite ice cream, place it on top of one half of the brownie, and top it with the other half of the brownie.
Line your ice cream sandwiches in a cookie sheet and put them in the freezer until you ice cream is firm. Take them out of the freezer and roll them in sprinkles, chocolate chips, or nothing at all.
My absolute favorite part of this recipe is that you can do any flavor combination, so try some Sea Salt Caramel brownies with Caramel ice cream, maybe a S'More Brownie with Rocky Road, a Milky Way Caramel brownie with Coffee ice cream, or keep it classic with an Original brownie with vanilla ice cream (you can even make some vegan or gluten-free combinations.
